🍲 Trahanas of Samos with Vegetables and Armogalo
🥣 Ingredients
For 4 servings
- 200 g trahanas
- 200 g armogalo
- 2 carrots
- 2 medium zucchini
- 1 large onion
- 2 celery stalks
- 1 garlic clove
- 2 ripe tomatoes, grated
- 400 ml vegetable stock
- 100 g grated cheese from Samos
- 100 ml dry Muscat wine of Samos
- 50 ml olive oil
- 5 broad-leaf basil leaves
- Salt
- Freshly ground pepper
🌿 Traditional trahanas with a contemporary Samian character
Trahanas is one of the most characteristic foods of Greek rural cuisine, simple, nourishing and closely associated with winter cooking.
In this Samian version, it is prepared differently from the classic soup. The trahanas slowly cooks with carrot, zucchini, onion, celery and tomato, gradually absorbing the stock until it develops a thick and creamy consistency.
Dry Muscat wine of Samos adds aromatic depth, while grated cheese from Samos melts into the trahanas at the end. Armogalo is added when serving, creating a pleasant contrast between the warm, rich base and the cool, creamy cheese.
👨🍳 Method
1. Prepare the vegetables
Peel the carrots, zucchini, onion and celery.
Cut them into small, evenly sized cubes so that they cook at the same rate.
Finely chop the garlic and grate the ripe tomatoes.
2. Sauté the vegetables
Heat the olive oil in a wide pot.
Add the carrot, zucchini, onion, celery and garlic.
Season lightly with salt and sauté over medium heat, stirring regularly.
Allow the vegetables to soften and develop a light golden colour.
3. Add the trahanas
Add the trahanas to the pot.
Stir continuously for about 1–2 minutes, allowing it to become coated with olive oil and mix well with the vegetables.
4. Deglaze with Muscat wine of Samos
Pour in the dry Muscat wine of Samos.
Stir and cook briefly over medium-high heat until most of the alcohol has evaporated.
The wine adds a subtle aroma that works beautifully with the tomato and vegetables.
5. Add the tomato
Add the grated fresh tomatoes and mix well.
Bring the mixture to a gentle boil before beginning to add the stock.
6. Gradually add the stock
Pour in a little of the hot vegetable stock and stir.
Allow the trahanas to absorb most of the liquid before adding more.
Continue gradually, almost as you would when preparing a risotto.
The trahanas should soften without becoming watery. The final texture should be thick and creamy, with the vegetables incorporated throughout.
7. Add the cheese
Once the trahanas is cooked and there is no excess liquid in the pot, remove it from the heat.
Add the grated cheese from Samos and stir until melted and fully incorporated.
The cheese gives the dish an even creamier texture and a deeper, slightly piquant flavour.
8. Add the basil
Finely chop the broad-leaf basil and add it at the end.
Stir gently and adjust the seasoning with salt and freshly ground pepper.
Adding the basil last helps preserve its fresh aroma.
🧀 Armogalo at serving
Serve the hot trahanas in deep bowls and place a generous spoonful of armogalo on top or in the centre.
Armogalo adds a cool, milky and slightly salty flavour that balances the tomato, cheese and Muscat wine.
As it slowly mixes into the warm trahanas, the texture becomes even more velvety.
